C. Villalar, 7, Madrid, Spain
What look like stairs leading you into a disco actually open up into an old underground coal bunker, now a trendy restaurant. The cavernous space of exposed brick is divided into four areas and painted white, with some monochrome steel panels on the ceiling. The young chef Darrio Barrio combines more conventional recipes with more adventuresome creations inspired by his stints with Adriá, Larumbe, and Subijana. The menu changes according to what's available in the market. Some recent highlights were ajo blanco with ginger ale, bull's tail with red wine and chick peas, and marinated sardines. Reservations essential. AE, DC, MC, V. Closed Sun. and Mon.
